Why does this have to be changed to this by the time it's posted?:

Also, while i like most of the markdown formatting, bold and italic are kinda annoying. If i type something in between asterisks, i usually intend for those to appear..

Heh, I literally just got out of the shower where I was thinking about this exact issue. Funny. I thought people would pay more attention to the preview and correct their posts as necessary, but this does seem to bite a lot of people in the ass. It can also be annoying when copy/pasting things like IRC logs if you're not handy with find/replace.

The issue of line breaks with Markdown has always been of some debate. I do think I am coming around to the side of treating single returns as line breaks though as it does seem to be the case more often than not that people don't get that right on these forums.

No, the forum gets it wrong ;) From your link, this comment sums it up "When I press the enter key to go to a new line, it would be quite nice if the editor actually did what I wanted it to."
